OLYN was created in Koukaki, just a few steps from the Acropolis, as a space dedicated to gluten-free flavor. It is not just another bistro with a few gluten-free options; it is an environment designed from the ground up around the philosophy of 100% gluten-free.

Our goal is to offer a place where people with celiac disease, those who avoid gluten, as well as those following a low-carb, keto, or more mindful diet, can enjoy brunch, coffee, baked goods, sweets, lunch boxes, and savory options with real confidence.

At OLYN, safety does not take away from flavor. On the contrary, it becomes the foundation for a cleaner, more balanced, and thoughtfully crafted everyday experience.

Το OLYN δημιουργήθηκε στο Κουκάκι, λίγα βήματα από την Ακρόπολη, ως ένας χώρος αφιερωμένος στη γεύση χωρίς γλουτένη. Δεν είναι ένα ακόμη bistro με λίγες gluten-free επιλογές· είναι ένα περιβάλλον σχεδιασμένο από την αρχή γύρω από τη φιλοσοφία του 100% gluten-free.

The Man Behind the Vision

Dimitris Paschalidis

My journey in business began in England, where I completed my studies in Business Administration and later earned my MBA. Upon returning to Greece, I worked for several years as an executive in large private companies, gaining valuable experience in the market.

In 2006, my entrepreneurial spirit led me to establish a consulting company together with my business partner. Since then, I have had the privilege and pleasure of supporting and assisting dozens of businesses, helping them improve their financial health, evolve, and grow successfully.

The Philosophy Behind Our Bistro

Alongside my business journey, healthy eating has always been an area of deep personal interest. The real turning point, however, came in 2005 with the birth of my children, which led our entire family to turn exclusively to organic products and adopt a more conscious way of living.

In recent years, I have personally been following a ketogenic diet (keto), constantly seeking balance, well-being, and a truly healthy everyday lifestyle.

Our Chef

Marinos Kosmas

After a successful nine-year journey abroad, where he worked as a Pastry Chef in leading, world-renowned restaurants such as Sushisamba, Duck & Waffle, and Novikov, as well as Group Pastry Chef for Meraas in Dubai, Marinos gained valuable experience working alongside outstanding chefs from around the world, including Virgilio Martínez.

The Birth of an Innovative Concept

His personal diagnosis with celiac disease in 2015 became the driving force behind his return to Greece in 2020, where he decided to channel all his expertise into an innovative project with a deeply human purpose: the creation of an urban, modern bakery dedicated to gluten-free pastry and bread making.

Starting from a small 40 sq.m. workshop, the project quickly evolved and today successfully offers products that are suitable and certified for a gluten-free diet.

Philosophy & Vision

Combining his personal experience with his culinary background, Marinos aims to offer a higher quality of life through food. Gluten-free products are at the heart of his philosophy, while his range also expands with care into other specialized dietary choices, including vegan, sugar-free, palm oil-free, and keto creations.

Media & Writing

His work has been featured in popular television shows such as MasterChef, Chef on Air, and health-focused TV programs. Marinos is currently preparing his second personal book, which will be the first Greek commercial cookbook dedicated exclusively to gluten-free living.
